Spicy Tomato Salsa

Ingredients

  • 2 tomatoes, finely diced
  • 1⁄2 red capsicum, diced
  • 1⁄4 red onion, diced
  • 1 tsp chilli flakes
  • Juice of 1 lime
  • Salt & pepper
  • 1 tsp raw sugar
  • 20ml olive oil
  • 1⁄2 cup passata/sugo

Method

  1. Heat olive oil over medium heat in a saucepan. Add the chilli flakes, onion & capsicum. Fry for 2-3 minutes.
  2. Add tomatoes and fry for a further 4-5 minutes, occasionally stirring gently.
  3. Add sugo (or passata) and stir in. Then add sugar, lime juice and season to taste.
