Ingredients

  • Pinch of sea salt
  • 1 tbsp coriander seeds, toasted
  • 2 tsp shrimp paste, roasted
  • 1/2 tsp white pepper
  • 5 birds-eye chillies, diced
  • 6 cloves garlic, chopped
  • 4 lime leaves, chopped
  • 2 tbsp coriander root & stem
  • 4 golden shallots, diced
  • 2 stems lemongrass, white part only, finely chopped
  • 1 tbsp ginger, finely diced
  • 1 tbsp fish sauce

Method

  1. Combine all ingredients in a mortar & pestle and work into a paste.
