Homemade Potato Chips

  • Large potatoes (approx 1 per person)
  • 700ml canola oil


  1. Wash, cut & dry the potatoes, then blanch them briefly in 500ml hot oil (140c/285f) in a deep saucepan or fryer (they shouldn’t change colour at this stage) for approx 5-8 minutes (until just before they go brown).
  2. Set them aside on kitchen paper to drain, keeping them at room temperature.
  3. Just before serving, fry them in very hot (180c/360f) oil (the remaining 200ml) until golden and crisp.
